Restaurant Captain

About the role

The Mandarin Oriental Sanya is seeking an experienced Restaurant Captain to lead its restaurant team. You will ensure the highest standards of guest service and support the achievement of the hotel's 5‑star/5‑diamond rating.

Key responsibilities

• Provide excellent, courteous service to all guests and oversee daily restaurant operations.
• Conduct regular tours of front‑of‑house and back‑of‑house areas to verify set‑up, service quality, food standards, cleanliness and maintenance.
• Maintain thorough knowledge of food and beverage menus to effectively service and upsell.
• Supervise equipment care, security and maintenance through staff oversight.
• Manage staffing levels, supply inventories and assist with scheduling, recruitment and interviewing.
• Support manager with training, development and daily departmental meetings.
• Visit guest tables during and after service to ensure satisfaction.
• Coach and mentor team members to foster a collaborative, growth‑mindset environment.

Required profile

• Proven experience in a senior restaurant or food‑and‑beverage supervisory role.
• Strong leadership with a focus on integrity, respect and responsibility.
• Growth‑mindset and ability to work effectively within a team.
• Commitment to delivering legendary service in a luxury hospitality setting.
